the depth of the grain on the material and the size of the part will play into a factor for the time. and believe me, it can be time consuming. i got into polishing stainless steel for a project at work. we had a customer that required stainless pans to be mirror finish and have the weld seems unnoticeable. it takes a lot of work to to blend a weld seem into mirror finish stainless steel, but its doable.

i used a kit similar to this at work. the one we have is probably better quality than this, but if your just doing one project it should work well for you. it comes with the compounds and pads you need. all you need to have is a die grinder or a drill to power it.

what are you looking at polishing?

Sure you can brush stainless steel. There are no grain lines in metal, just the lines that you put into it. such as brush lines, sandpaper lines, scratches, or the lines that are made when they cut the steel. My work uses compounds and rouges to shine and cut lines. If you have a good polishing tool that spins fast you can brush 240 grit lines out, if you sand up to 320 grit, if will be easier to brush. Pending on how deep the lines are you will have to sand those out if you dont want to see it. Brush lines are really fine, you can get a mirror finish with brush lines. If you buff the brush lines out it would look better. To get a absolute mirror finish with no lines we use a felt. But that is after sanding, brushing, buffing, and then felting. I've polished metal so smooth before it creates a suction when rubbed together. Only problem with sanding is if you are not careful, you will put low spots in them and make it look lumpy when you shine it up. Check out my work site. A1chrome.com.
