Just one question though.... why on earth does it take all the way to the redline to spool up to 5 psi?

My first guess would be a boost leak, but those tend to show up as a peak and drop on a boost graph. The fact that it never builds up would lead me to believe you got a big leak, or something else wrong. If you were running a huge turbo it would make sense, but that looks like a centrifugal supercharger boost graph, not one for a turbo.

Check and make sure the wastegate is closed completely until its supposed to open, and make sure your BOV is closed as well.

These were my initial thoughts as well.

well, in the middle of pics between the graphs, it does say "Run ID: Tuned 5PSI"
I am guessing that the tuner only wanted to go 5PSI???

Thus the use of a waste gate and boost controller to keep it at 5psi.

the turbo unchecked will build boost until it runs out of balanced shaft speed and tears itself apart. Hence the wastegate to bleed exhaust flow off and keep the speed of the turbine wheel in check, thus regulating boost level.
The turbo should hit 5 psi WAAAAAY before the redline, it ought to hit 5 psi an instant after it starts building boost.

idle the car, hold your hand in front of the bov dump port and feel for a stream of air. adjust the spring until its closed. You probably should have checked that on the dyno. If you're convinced the MAP sensor is reading 5 psi, stick your boost gauge in the BOV vac line, it ought to also read 5 PSI.
Dont stick your hand in front of the wastegate, Make sure the fire ring is seated in there if its external, if its an internal, make sure there's a slight tension on the actuator arm so that you're certain the flapper valve is shut tight.
If you have a closed loop from a boost source to the wastegate, stick the gauge tap in there, measure boost pressure.

I guess my explanation wasn't quite in-depth enough huh?
