ATE superblue is probably the best high performance clutch/brake fluid IMO.

ATE is the best by far for street and some track use. For serious track use, look at Motul RBF600, Motul RBF660, and Castrol SRF. They're not cheap, though (Castrol SRF is $70 per liter)!

The rate at which the fluid absorbs water, how well it retains the water it has absorbed, and the wet boiling point of the fluid.

That's it. 2 liters should be enough.

For a street car, that Valvoline Syn stuff is great. Works very well and is super affordable. One thing I'd like to note is that although DOT 4 has a higher boiling point than DOT 3, it absorbs water quicker than DOT 3, so it'll lower its boiling point faster and need to be changed more frequently. "recommended" is every 30k, but most people range from 100k to never

Castrol GT LMA fluid ftw.

Don't use DOT 5 fluid, it doesn't absorb water and any water in your brake system will sit there and corrode your parts.
