What are the differences quality wise because I could care less about how it looks?
I'm mainly speaking of the JDM DC header. Argue away....

Quality wise...S/S is better, ceramic is cheap, you get what you pay for

As in the ceramic will eventually crack? Or will it just start to look crappy?

Steel exhausts sound better than stainless IMO. There is a tinny resonance sound quality to all stainless exhausts. Steel sounds better but will rust.
