what's the exhaust tempurature gauge for?

I am just curious...

 

It's for tuning. You can tell if you are running rich/lean from your exhaust temperatures, and make fuel adjustments accordingly.

 

do I need a senor for the gauge?

 

I'm including the sensor. It looks like it's sold though...
