Have you actually measured oil pressure or did you replace all that stuff by trusting the stock oil pressure switch?
If the insulation is rubbed off the wire for that pressure switch & it shorts to ground & flashes the light...

the pressure switch is new. the light takes about 5 miles before it comes on. after turning the car off and letting it sit for a while it takes longer to come back on. if all that makes since
You could perform a voltage drop at the connector to see if maybe it's a bad connection causing the problem. Heat can affect connections as well. I would hook a guage up to the sender hole and measure the actual oil pressure and confirm the integrity of the electrical circuit before replacing anything.
The oil pressure switch is normally closed at zero pressure, & it opens with oil pressure. So you want to unplug the switch & check to see whether the wire has any continuity to ground. It shouldn't. Even while wiggling the wire or shaking anything you can think of.
