they are 194 bulbs I think. Why not go with Amber?

Why would you want it brighter? That will be harder on your eyes and also make it harder to see the road at night due to the glare coming from the gauge cluster. White LED's tend to have a more bluish hue (like xenon HID's), and the more blue a light is, the more fatigue it causes in your eyes. You probably also won't be able to dim them if they are LED's.

I put regular amber bulbs in mine and keep the dimmer down around 1/2 to 2/3 full brightness, it's much easier on the eyes.

gauge cluster bulb swapping is pretty common. ive got a set of reds and greens.

fyi: bulbs arnt that bright (i dont know about white) but they DO work perfectly with the dimmer switch.

(edit) main problem have with LEDS is theyre directional, so the light isnt always even. i have 5-led wide bulbs from http://www.superbrightleds.com but ive had 2 bulbs (out of 8 that ive purchased from them) stop working. theyre not too expensive though so maybe if you do get them order an extra bulb or 2.

ive got amber and they were much easier on the eyes than the red ones i used to have. if the white lights are dimmed than it shouldnt be too bad.
