Maximum tire/rim width without rolling fenders???

Im looking at getting some new rims and tires soon. I was looking at getting a 17x9 in the rear and running 255/40 tire. I was also at look at getting the 275/40 since its only a few bucks more but didnt want to have problems if i could avoid it... If I did go with the 275, Im almost certain I would need to roll the rear fenders. would i run into more problems later down the road when i decide to lower it as well... its mostly a DD but some occasional track events and a lot of spirited driving thrown in... also while I am at it, whats a good combo for front tires if Im running the 255's, 215 still or should I go with a 225? itll most likely be a 17x7 rim... the reason I ask is because the falken website suggets a 7.5" rim with a 225. thanks for your help and hopefully i didnt confuse anyone with my long drawn out sentences...
I run Kumho MX in 275/40-17 rear on a 17x9+62, and a 225/45-17 front on a 17x8+48. I have -2.0 degrees of rear camber and I have a slight rubbing issue on big bumps. I'm going to roll the fender for clearance.
If you are running less offset, you will have more problems than I do. It's tough to find the correct offsets for the S2K in wider wheel fitments.
In my experience, I like the feeling of big offsets. It really seems to calm down the snap oversteer in the AP1.
