"Variable-Timing & lift, Electronically Controlled: This is Honda's term for their technology that adjusts the amount that intake/exhaust valves are opened based on the current engine speed."
Basically what it does is this: When you hit the VTEC crossover hits (I think it's like when you cross 5800 RPMS) the engine switches from its gas-efficiency intake valves to its performance ones, or something to taht effect.
Even more basically what it does is make the engine louder and kick out more power up to the redline. Think of it as a mild turbo spooling up and kicking in.

Wrong, thats normal VTEC.
VTEC is Honda's slang for Variable Valve Lift.
(even though its short for Variable Timing Electronic Control)
I-VTEC is Honda's slang for Variable Valve Timing.
(something Nissan had decades ago)
SOHC VTEC works on the intake came
DOHC VTEC works on both the intake and exhaust.
VTEC lift usually engages past 5000pms but on the old f22 accord they came on around 2-3k.
I-VTEC uses a timing chain to adjust timing with the brackets. It retards and advances the timing on the cams for optimum efficiency and power. Back in the day you'd either retard or advance an engine to get it to make good power at high or lower rpms. Now we have this variable mechanism and not fuss with it anymore; k-series guy

The only way you can tell the difference between vtec's is to actually feel the difference in the car itself.
sohc e-vtec is pointless, you don't feel it, hell who knows if it even actually does something ( I am being sarcastic) all it does is make the car louder.
To get a good feel on this, drive an 01 to 05 civic.
If you want to feel true old school vtec, drive a 99-01 prelude
Wanna-be I-VTEC is apparent in the 02-05 civic SI
