WHen you do a cat back install, you should be no where near the O2 sensors. My guess is, that you didn't tighten it down enough and you have a leak some where.
Worse comes to worse take it to your local parts store and have them check the CEL code. It's usually free. i.e autozone.

Yea you are competley correct.... I read skunk2 exhaust but thought header anyway....

Yep, its gotta be a leak since there aren't any O2 sensors past the one by the cat

I installed a Skunk2 catback as well, but received no CEL. There's several reasons why you would receive them though (from what I could think up):
1) You/installer damaged the O2 sensor/ O2 sensor cable during installation. Usually from hammering the life out of those machine pressed $#*%@@!* bolts between the exhaust and the cat.
2) The O2 sensor loosened durning install.
3) You have an exhaust leak. Check the bolts and the gaskets along ALL parts of the catback, specifically the gasket and bolts where the exhaust hooks up to the CAT. If you used the machine pressed bolts in the CAT, it probably isn't on tight enough (speculation, but possible) as the stock machine pressed bolts are short.
Also, as a side note, make sure that you disconnect the battery for 10 minutes and then start it back up and let it idle for 15 minutes! It makes a difference just like intake. Although it may not solve your CEL.

I guess, but there's really no reason to touch the O2 sensor on a cat-back install. Anything's possible tho...

thanks guys, i didnt take it out for the install but im sure i did mess it up when i was getting the bolts out of the cat as you said they are a pain... i didnt think i had to have a defouler(in-fouler) because i dont have a race header or a test pipe. i am going to check the bolts tonight and look around the o2's to see if i can spot something wrong.
