ITB's usually wont have a significant effect on peak power vs. a manifolded setup (providing a proper style manifold was used) but the area UNDER the curve usually improves dramatically with individual throttles. The direct shot into the port that the ITB's provide can also assist in ram filling during high engine speeds, but the length of the runners need to be matched to the setup to achieve this. Throttle response is also unmatched with an ITB setup vs. Manifold.

If your going to be driving this car on the street, i would recomend some filters for each throttle, and an engine management system than can control the fuel and ignition maps purely based on TPS input (often called an ALPHA-N system).
