whats up with the underscore or whatever? And I dont think you can polish a ceramic header unless you spray paint it

You can polish mild steel up just fine.....given its going to rust like expletive about 4 hours later, but you can do it.

If you try to polish it, it will take the ceramic off and the plus side to having a ceramic header is that it keeps the exhuast temp down and not heating up the engine bay. Polishing it would be stupid.
