Or is regular water fine?

well, ideally you should use distilled, but it won't matter that much. Just don't fill it with untreated lake water, and you'll be fine.

so you don't bother getting a proper mix?

You should at least try to get 50% water. The water will transfer heat better, and the coolant will help with corrosion and lower freezing point.
