You most likely have a vacuum leak.

Place your hand over the throttle body inlet and see if it still idles. You must be getting air from somewhere.

did you use a new Intake manifold gasket when you put the manifold on?

sounds like you missed a hose or something, or didnt screw a sensor on tight enough

check your iacv, fitv, throttle bods, and temp sensor

You definitely have a vacuum leak. You just need to find it now. Perhaps you can hear it leaking.

did u clean the port area of all the old gasket. it has to be 100% perfect or it will not seal right at all. even a scratch can make a small leak

It is not his IACV. He eliminated that possibility when he sealed the throttle body with his hand.

That is the same problem I had when I didn't scrape off the old gasket that had crusted itself to the head and manifold. Scrape it off the best you can and that should fix the leak. The air is coming in between the head and manifold.

A simple vacuum leak will only give you a bouncy idle about 750 rpms higher than spec.

I hear a trick to find vacuum leaks is to spray brake or carb cleaner on the suspected area and start the car, if it sucks the cleaner in you found your leak
