I'd like to learn a little bit more about jigging/fixture techniques such as long runner (ramhorn style) manifolds and jigging them properly so that nothing presents a problem in the future, if anyone has any links or pics that'd be great

I don't know of any links to building a jig. But you're going to want to look for a fixed machined surface, ie the flange would be ideal to mount and from there just make your measurements and reference everything back to the face of the flange. This will keep your measurements consistant.
