dialing out overlap with cam gears... what are your settings?
Ok, first of all i know there are ten people ready to type "you need to dyno the car to get the right settings". Yeah, i know that
I know the basic concensus is to advance the exhaust and retard the intake. I just want to see what you guys have yours set to so that i can find a decent starting point.

I think you answered your own question...
My Web Cams won't act like your cams but the max I've ever moved mine is 3 degrees.

I posted this up a while back, and most people agreed on +2 exhaust and -1 intake is a good starting point for an LS engine.
I have found on my car that advancing the exhaust and retarding the intake has made a lot less power than advancing the intake and retarding the exhaust. And yes I have tuned them on a dyno.

Yes, I am aware of that. We tried advancing the exhaust and retarding the intake but after like 5 different combinations we ended up advancing the intake and retarding the exhaust and made more power. Just proof again that they need to be tuned on a dyno.
Every engine setup is different, different cam specs (lift, duration, ramp rate ect..) deck height, whats milled off the head etc.. there is no "one fits all" in that situation.
