rust repair

Ok, one thing thats got me confused. I have to do ALOT of rust repair on my 89 240sx. Its just a project that I want to mess around with. Now for example I need to cut out a peice of the floor and weld in a new sheet. Thats easy though becasue after its welded I can paint the bottom and top.
I also have some rust like in the door jam and the 1/4 panel area. After they are cut out, and now if I weld in new sheet metal, how do I protect the back of the metal? The inside I cant get to with paint, and if i paint it before i weld it in it will burn off anyway.
Any tips here?
