Stainless if you can afford it.
Ceramic coated headers is a good idea* (and not the first time it's been done) The 6 cyl XKE Jaguar came with ceramic coated exhaust manifold(s) (Two three-port manifolds) as original equipment. At that time it was for aesthetic considerations, but they chipped and flaked over time. I suspect these will too.
Whichever header has the more gradual collector taper would be the one I'd choose. I've heard comments (in passing) about some collectors needing reworking if you're looking for more than just hanging an exhaust on it.
*Helps to promote keeping the heat in the exhaust.
