I have the Skunk2 IM on my LSVTEC and it idles around 2000-2200 cold. I think it's normal, since my car runs fine with no problems and idles at 750 when warm.

you dunt have anything to worry about, the car revs high when cold to maintain higher oil pressure so you can get oil runnin throughout the engine until warm.

Sounds like your thermostat isn't closing enough, so the engine doesn't warm up quickly.

Yep sounds like thermostat, I replaced mine the other day. Your water should heat up to operating temp fairly quickly. Mine does within 5-10 mins.
