Temperature Fluctuation?

Temperature Fluctuation?
under acceleration, the temp goes up above the half way point.. during a steady pace it sits in the middle.. and during idle it sits at normal..???
i filled the resevoir to the "max" mark.. and after a 5 minute drive with the temp fluctuating problem, it is down below the "min" mark..
is my water level too low??
what else could be the problem??
