Were oil squirters installed? (or do they come standard on the LS I'm not sure)
I don't see why you couldn't rev to 8000. It's only 800 higher than normal, and usually the rev-limits are determined by the valvetrain setup. I would say the top end can take 8000 no problem, maybe ask the builder of the engine or retailer of JE pistons what they think just to be sure.

should be fine to 8200 as long as they arent stock rods with stock rod bolts. the gsr head valvetrain should be fine with ~8krpms.

depending on what rods and if they have stronger rod bolts.. if it doesnt then i would 8k wouldnt be a problem at all.. i rev mine up to 8500 all day everyday for the past 11K miles.. havent had a problem yet.. i have stock rods with arp bolts.. and a gsr girdle installed.. hope that helps a lil..

id say to stay on the safe side and dont go past 8k until you get it checked out by a speed shop.
