Cermaic Headers vs. Steel Headers
Ceramic headers ARE made form steel.....mild steel to be exact....that are ceramic coated. I assume you meant to say Stainless steel.....I preffer the stainless steel..particularly in a northern climate.

And to expand on that, the reason they are not made from ceramic is that it is extremely brittle, and would crack in minutes from the stress and vibration.
