if you get stainless make sure its solid and not just plated, IMO the ceramic coating has a tendency to crack in many applications i have seen, plus stainless polishes up for the bling factor, lol, performance should have nothing to do with material more the design (4-2-1 , 4-1) and manufacturer.

Which is better 4-2-1 or 4-1?
I had stainless steel headers, which worked no problem, guess it helped with horse power but didnt really feel it u could say.
For looks id get the heat wrapped headers.
