Stock springs = stock ride height.

I know some after market shocks lower the car like 15 or 30mm. I think Koni Yellows do this..

What exactly is a camber kit, what does it do and how does it work? I have heard of alot of people that lower their cars saying to get one.
For double wishbone suspension, negative camber increases when the control arms move upward towards the wheel well. Becuase of this design, when you lowered the car, you would automatically get some negative camber. The more you lowered, the more negative camber you would get.

For a daily driven car, if it has over -2 degree camber, you should get a camber kit so that you won't get excessive tire wear from daily driving. It also allows you to dail in (or out) the camber settings so that the car would corner the way you like it to.

I thought I have answered your question. Can you be more specific on what you want to know?

What does it mean to dial in (or out) camber settings? Is there like a **** or something you turn or adjust or what?

Camber kit, skunk2 for example, has a sliding ball joint that has 4 bolts holding it into place. The person who does the alignment can release those bolts and slide the ball joint in or out (towards the wheel well or away from the wheel well) to achieve your desired camber angle.
