oil and water mixing causes a mixture that looks like a chocolate milkshake. This can be caused by a headgasket failure or some other internal engine failure like a cracked head or block. you could check by verifying if there is contamination in your oil or coolant. Is it running hot? Good luck...

So....heres a stupid question: What gives this by product it's white creaminess? Is it simply the water mixing with oil? Or is it a chemical reaction between the antifreeze and the oil?

no chemical reaction present, just a physical reaction. like water mixing with ATF fluid turns it into a strawberry milkshake. i think it was intentional when the desigen antifreeze, so it's easier to spot in oil.
