Where to get tires mounted.........
Call around... shops that specialize in high-end cars will be more careful. Many shops now have what is called a "touchless" mounting system where the arm does not touch your rim.
Just get a commitment from the shop manager and hold them to it.

try NTB off of walzem rd.. I'm from san antonion too and that's where i went to get my tires mounted on my volks. I was afraid of them putting scratches too, so i talked to the guy before hand, and he was pretty cool and assured me there wouldn't be any scratches. Kind of pricey($80-90), but oh well.
There are several different machines out there that can mount tires and never tounch the rim or just touch the inner side of the wheel. When I used to bust tires we had a machi9ne called a "Gorky", you set the wheel on it and it expanded out and held the wheel in place from the inside and rotated it arouind to slip the tire on. We ony used it for nice new wheels and large expensive wheels we didn't want f up, no additional charge either.
So just go to any shop and tell them you don't want the outter lip touched. If they say they can't help it they are either A) stupid or B) Lazy(the better machines take a bit more time and effort) or C) they don't have one of the good machines(unlikely)
