any ideas on how to get ceramic coating off header?

Grind off the ceramic coating where you will install the bung. Drill the hole for the bung using successively larger bits until you get the right dimension. Then weld the bung to the bare steel. Done

but they really do reduce bay temps drastically(while its still on lol)

I don't know about that. Regardless, uncoated stainless steel keeps temperatures lower due to its low thermal conductivity.
