I've never heard of the MSF offered on weekdays. Why not hit up the DMV when they're not open? If they offer Motorcycle-Testing at your location, you can practice all you want on their "course," assuming it's not being used.
try http://www.ca-msp.org/
list all the classes nation wide there are alot in CA area...
since you told me once you lived in huntington beach and another time you lived in garden grove i don't know which is true... but there is a closer one to you in costa mesa so you might want to try that one first

Kinda off topic, but here in Ohio it's illegal to practice on the DMV's course. I've had my endosement for a while, but my roomate just got his M, and I took him down there before to practice and sure enough after the first few times we went, they put up a sign that showed the law so we stopped going back.
I guess they don't want you to cater your practicing to a specific set of tests. If anyone is practicing on the courses just be careful!!

Really??? That is backwards logic. I can't imagine why they would not want you to practice on the course that is supposed to test some basic motorcycle control abilities. Unless, of course, the test doesn't REALLY measure anything.
You could find an empty parking spot, copy the design of the DMV Ohio test, sketch it with chalk, and use that.

hey i got a question guys, the paperwork they gave me says i need over-the-ankle footwear. What about those motorcycle street shoes that just have the ankle protectors sticking up over the top, is that acceptable?
nope they will not let you in the parking lot with out the shoes going over your ankle.... high tops or tims/ lugs any of those will be cool they don't have to be like leather motorcycle boots
