The hose ovals out a little on the bend... any ideas on how I can smooth the bend out a little or does this look ok?

maybe 45 off the turbo and angle the pan up a bit more, and shorten the hose.

Should I shorten the hose more and angle the fitting at the pan up more or just leave it?

You could get one of these to eliminate the NPT to AN fitting.

Ebay

As long as the oil is always flowing down, and not pinched, your fine. In your first picture it looked like the return line dipped down and then back up, but it looks good now.

Better than my first attempt:

it could potentially cause oil to backup into the turbo and out the seals causing your turbo to leak and smoke therefore needing a rebuild

That one would benefit from a 90 on the pan.

And a good set of AN wrenches

thats what I hate about those fittings... if you dont tape them and use the right wrench they get scratched way to easy....

I think he means tape the outside so the finish doesn't get scratched...

Ah. That works too.

Teflon Tape+An Fittings=Bad

The vise jaws that have cut outs for fittings are really nice if you build alot of hoses.
