Default help plz....gray smoke comin out of exhuast!!

Alright, I finally finished up my 5spd conversion. Im having no CEL codes. But last night when I drove it, gray smoke kept comin out of my exhuast. I was told that this is normal bcuz I havent driven my car for 7 months and should go away soon. Well, I let it idle for a long time and driven it for 30 min. Gray smoke kept comin out and Im not gettin any CEL's. Also, I noticed that the engine temp was above normal. I filled up my radiator coolant and also the reservoir after I flushed it when I swapped my intake manifold last week. So that cant be the problem. Also, after it idles for awhile (900ish RPM), my RPM just dropped dramattically down to 200ish then goes back up to 900ish. Oh and I recently changed my oil and spark plugs this past weekend. What could be wrong with my car and how could I fix this problem? Thanks in advance people.

I was told my o2 could be bad also. Ill check it out later tonight or tomorrow. I know its not a non-functional CEL though.

Are you burning any oil? Also, check your timing to ensure it's correct. You might have a blown seal? As someone else mentioned, check your sensors and see if their is any foiling of the plugs etc. Sounds like you're running too rich to me; but that's just a guess!
