Header gasket is easy to replace. As long as that motor is in good condition (have a compression and leakdown test performed) you should stick with what the owners manual says. 5w30 is more than fine.
Why does the car have cams if it's stock otherwise? Do you plan on I/H/C/E and tuning? You will also need cam gears.

286,400 and counting on my DB8....tranny could use a swap, but still running pretty strong. I've used both 5w and 10w 30 oil and find 5w runs a tad better than 10w. In cold weather, I noticed with 5w oil my motor tends to start up a lot less harsh. I guess I'll have to see what its like this summer.
