195 is stock width and not 205 which is also able to fit

Perfectly fine. I had 195-50-15's on my 15x7 fittipaldis and they were absolutely fine. Looked really nice too, doesnt have that balloon look you get with 195-55's

how does going from 55 to 50 make it more dangerous? is it because of the heat created when on the highway?

There is additional info on that tirerack page that might be relevant:
82 = 1047 lbs -- multiplied by 4 = 4188 lbs
85 = 1135 lbs -- multiplied by 4 = 4540 lbs
Googling shows 1994 GS-R sedan has a curb weight of 2628 lbs.
So unless you're carrying close to 1560 lbs (which included occupants), it would seem 195/50/15 is fine.
I have to admit, I hadn't considered load rating before....

i would go w/ 205 rather than 195, the small extra weight isn't gonna make a difference, it'll depend on what tires you go w/ too, 205 just give you wider contact patch and better look, i think the 195 would come short w/ the 15x7, it's better for 15x6.5 IMO,

A couple other things that might factor into the decision:
Some tires don't come in 205/50/15, but do come in 195/50/15, such as Goodyear Eagle F1 GS-D3. This is #1 max performance tire on tirerack's survey.
Some tires are significantly less expensive in 195/50/15 than in 205/50/15.
