What are "valve jobs"
u know where the valve sits on the head. imagine a valve installed on teh head the part where the valve touchs the head the outer circle man i should just get you a picture but basically where the valve sits in the head. too make sure there a good seal they do a valve job. valve job also helps with flow of the head its considered one of the most important parts when porting.
Here is a picture of a "valve job". The angles or radius allows the air to turn the "corner" at low and mid lifts (the most import flow occurs at low and mid lifts). Also a good valve job increases combustion chamber seal. Sealing is a cornerstone to making power.

No, you can perform a valvejob on the head with the existing valvetrain as long as the valves are in good shap.
As long as the valve job is good (well done and seals good), there shouldn't be any downsides.
