As in I never forgot things firmly bolted into my car. Like the seat ???!!!! (holy ****, I forgot my seat !), as in I drove the car onto the trailer or all the way to the track without it?
The mirrors (where they hell did I leave them this time?), the harness, and the fire extinguisher. But there's always a chance.

seat = check seating position is correct and comfortable if you are still using rake adjustable rails and check they are in good condition (this is something the scrutineers check, in my series anyway)
mirrors = make sure they are positioned correctly so that you have optimum view around the vehicle, some vehicles have manual adjusting mirrors and require someone outside the car to adjust them for you as sometimes they are bumped out of position.
These are things to check once you are at the track to make sure your car is safe and ready before racing, there are obvious things you would check and maintain before you get there. No need to be a smart ***.

Lots missing here. What about brake pedal/fluid condition, pad amount. Extra clothes/stuff if it rains all day (last year). Long-sleeve shirt and long pants .. some tracks dont let you on w/o them. Fill gas tank. Check tire wear/spare tires/wheels. Food/drinks. Cash (snack bars like cash... so do real bars). Camera(s) where they're mounted and dont forget to turn em on. Torque lug nuts... Re-torque after a run or thermal-cycle.

I use a check list to prep the car and then use a check list that is two pages long just to load the trailer and pack up and then have a check list for when ever the car comes off track and then tire sheet to mark heat cycles.

this check list isnt to make sure that you get everything ready the day before, it is simply stuff to check and go over the car once you get to the track, to make sure everything is safe and ready to go.
Things like tools, shoes, chair, petrol etc should all be done before arriving at the track.
