Did you properly adjust the clutch cable?

Sounds like a pilot bearing or alignment problem, if the above is not out of adjustment ^

no it wont.. something is wrong dude, if the cable is adjusted proplery (and you say it is so i wont argue) you gonna have to pull it back apart and make sure its together properly!

Have you checked the ball joint where the clutch fork goes into the tranny? It did the same thing to me where that clip there was messed up. The clip needed to be bent a little to tighten it up so it wouldn't pop off

also, be sure that the release fork(the fork that the cable goes in) moves freely, not to get caught up/ bind'd

That was my problem. It was hard as expletive getting it into 1st & reverse would just grind. I took it out for a drive & it popped all the way off leaving me needing a tow.

Hello you said that you resufaced the flywheel if so check the holes for the pressure plate some times there is some metal shaving inside those holes.
take the flywheel out and install the clutch and see if the pressure plate sit all the way down or didi you check the way you install the clutch

check the clutch fork, same exact think happend to me and my friend, there is a lil pin that holds the fork in place, if that pin isnt in its correct place, it wont let it go into gearing, we had to take the tranny back off and put the pin back in place

Sounds like its not releasing enough to be fully disengauged. I had a problem with my cable not being adjusted enough, I thought 'tight' was enough, I had to crank it like crazy to get it back to spec. In other words, cable trannies can suck my ****.
