CAN or CAN'T? if it can, then that's fine... if it CAN'T depends how "efficient" you want to run... if you don't care about efficiency, then keep.. if you do care, sell it and get a larger one

CAN. I was wondering if there would be a problem w/ the intercooler being to large for the amount I will be putting out (100-200 less than what the intercooler CAN handle). I would like to buy a larger so that I have room to "grow" into it like I have planned.

You cant answer this with common sense?
Too small and obviously it wont cool the temps enough.
Too big and it will contribute to turbo lag.

No, it really won't. I started off with a bumper mounted intercooler in my race car, and ended up moving it behind the passenger seat. Added around 10 feet of extra piping, paired up with a much larger core. Guess what! No difference in spool at all, period, amen. We also went from no intercooler and about 5 inches of charge pipe from the turbo to the inlet on a friends 2.3T mustang, then added a front mount intercooler adding probably 4 feet of pipe and a large powerstroke diesel intercooler. Guess what! No difference in spool. Even scruitinizing datalogs you will be hard pressed to see anything.
