How do the tuning shops in the US survive or started

As the topic sais.
In the last months I´m thinking about how the tuning shops in the US can survive.
Do the guys really life just from building race cars,install turbos and so on?
Or do they also have to do "standart" jobs like oil changes on non-tuned cars?
Is it a must that the guys working in that kind of shops have a mechanical education?
It would be kind if some people can tell about theire experiences because I would like to compare it to our situation her in Germany.

The stuff we love to do like fabrication, tuning, building rally cars, etc isn't always in demand. As a result, the fun aspect of the business is supplimented by doing things like clutch jobs for local EVO drivers, etc to keep the bays full and the work flow going.
