engine build up terms

engine build up terms
i got the parts list down pistons, rods, sleeves etc...but what i don't understand is certain terms for engine build up. would the shop know what i want?
here's a list of them:
decking
honing
o-ringing
bore (if you go bigger bore on the sleeves. what else you have to do to match the bore?? and how do you know how many MM? i have a 94 accord btw f22a1 )
any more terms to add with engine build up/ rebuidling engine??
when building the engine would the shop know to change all the gaskets and bearings? what else would i have to change??
also..how do you know if the shop you go to is ripping you off or not cuz you can't look inside the engine to see if it's your parts.
