Default Total timing

Just finished getting the afr's correct street tuning my b18c4 turbo, going to start tuning ignition now with det-cans. Am I correct in saying that the numbers that show in tables are my total timing? As some people say I have to minus my base timing of them numbers and some say I don't and that is my total timing number eg at 8000 rpm 16psi boost the number on the vtec ignition table is 21 so my total timing at that load is 21 degrees

You also have to factor in ECT/IAT ignition corrections if you are using them.

No that is not correct. That is your "table" timing. There are many other factors that add or subtract to the table timing.

The ecu corrections are probably throwing another 10 degrees on top of that at 8000 rpm.

Table timing is not total timing. Most tuning systems will let you display total timing.

You're tuning, not diagnosing a problem, so it doesn't really matter.
PS, I'm not sure why you thought it wasn't important to tune your fuel maps with no knock detection, but tuning ignition suddenly makes knock detection directly relevant?
If you're tuning ignition by advancing until it knocks, save yourself some time and just throw a grenade under your hood.
Please read my manual, and start with very conservative timing tables if you're not using a dyno so you can trend the power changes and predict which regions will max out sooner than others.

I am using hondata s300, how would I be able to see what my total timing is? My last engine I just left it at 0.7* per psi retard and tuned the afr's / listened for det through det-cans and didn't seem to have any so I left it like that and never had any problems in the 2 years that I had it, and sorry I should of said I'm still using det-cans now while to tuning my afr's just to make sure that there is no det at them moment, I know most people will say just take it to a tuner but I like to learn things myself I built the engine myself too it's- a b18c4 block
81.5mm 9.5-1 cp pistons
Manley rods
id1000 injectors
bwr ram horn manifold
tial 44mm wastegate
3 inch downpipe and exhaust holset hx35 turbo 12cm housing
Acl race mains thrust and rod bearings etc.

1. Make sure your distributor timing is synced.
2. Make a datalog & review the IGN value in the datalog.
