overheating at drag way

I have a 1991 integra with ls/vtec turbo. set up is stock head, je piston eagle rods other bolt on, 750cc injector log manifold t3-t4 turbonetic turbo, civic Aluminum Radiator. new water pump, and oil pump. motor has 1500 miles on it. it put down 345whp. when i drive around on the street it runs normal temps. the oil temp sometimes gets to 210 when it hot out. i ran it once at the dragway (new england dragway) and the coolant and oil temp. spiked. i have S300 but no laptop so no datalog to see how hot it got. Why did it get hot. Didnt blow heat gasket no cooland or oil leaks. I drive the car everyday and dont have any issues with it. any help would be greatly appreacted. thank you

I have a t-stat. its a 186degree.. i have a slim fan, it is blowing away from the rad. not pushing threw it. it runs cool even in traffic. and doing highway pulls. no sure
