The NRG quick release is by far the most commonly used quick release as far as I've seen. If you don't use/buy the lock, any theif with the same quick release can mate their steering wheel/release up to your quick release.
You'll end up needing a hub, most people that use the NRG setup get the short hub. As well as the hub you'll need the actual release itself check out the NRG 2.0 vs the 2.5 and see what you prefer if your going with the NRG products. Then for extra security measures I suggest getting the lock.
Works Bell has a very decent looking release, from what I've seen it also has a "tilt" option. I'm pretty sure Sparco and Momo both make quick release products as well.
