Default Relay or a just a switch ?

I am going to be hooking up a kill switch soon, either to my fuel pump or igintion. Which one would be better to use and why ? Would I be fine just with a switch.

Also it's easier to hide a 30 A relay than a BIG, UGLY 30 A switch.

The current rating on a switch is what the contacts will handle switching, not the current flow while the switch is closed. High DC current can produce a giant arc when switched. Since the switch won't be opening/closing WHILE high current is present, a small switch may be used. Check the specs on the switch you're looking for to make sure it'll handle a speciific current while closed.
