If its too bright in the car to see the dimmed clock then you probably have no need for lights on in the first place. I dont have a clock as i fitted gauges in that location and i dont miss it either...but i do have a watch.
If it annoys you that much, pull the clock out and get a multi meter and find which wire is dead when the lights are off and has a 12v feed when theyre on and cut that wire, so that the clock doesnt dim at all.
