I don't know where they got those numbers, but at least some of them are wrong. For example, the 2000 ITR has a curb weight of 2639 pounds according to all of the specs published by Honda (such as in its brochures).

Yes, it is, if the correct specs are used. I believe the newer ITR ('00-01) is lighter than the GS-R by about 30-40 pounds. The earlier ITR ('97-98) is even lighter than the newer one, mostly because A/C was optional the first two years.
Keep in mind that even though some equipment was removed from the ITR to reduce weight (e.g. sunroof, cruise control, A/C, etc), other items were added/changed which added weight (rear bar, bigger brakes, etc). Overall the ITR is still lighter.
Here are the weights in the Edmunds specs for '98:
2 Dr GS Hatchback 2636 pounds
2 Dr GS-R Hatchback 2665 pounds
2 Dr LS Hatchback 2640 pounds

As you can see above, the curb weight of the '98 GS-R is 2665 for the hatch, and 2762 for the sedan. Differences between that and your car may be due to (a) less than full fuel (80 pounds of gasoline), (b) equipment that you have removed from your car prior to weighing, such as jack, spare, etc, (c) weight-reducing mods, (d) year-to-year differences if yours is not a '98 (these should be minor), or, the most likely cause, (e) inaccuracy of the scale used.
