Default Bouncing temperature on when i drive

i just recently build a ls/vtec turbo on my integra. its tuned but with factory injectors unitl the ones i ordered arrive. ive noticed the temperature gauge in the cluster passes the center point a lot even when im just cruising. sometimes when i accelerate it begins to cool which is kinda ackward i guess. i never had problems with overheating except now. the car has a pretty big intercooler and the radiator fan works well. so i dont understand why its doing that.
advice anyone?

do you have coolant in the radiator? if so then change the thermostat.

here it gets complicated. my friend took off the thermostat. he says here in hawaii you dont really need it.
he didnt really take it off, he just cut the center and put the rest back.
should i take the whole thermostat out?

well if you like that bouncing temperature then you can take it out, but like its been said you need to put a new one in, put the new one in then come back here and ask more questions if it doesnt work.
