Default engine temperature

I was woundering if there is a down side on having the engine run too cold all the time. enough to i can stop and put my hand on the head and no burn. i have a fluydine radiator and checked thermostat

Where is the needle on the temp gauge? Feeling the valve cover isn't really a good indicator of engine temp.

If you have a vtec engine, the vtec won't even engage if the operating temp isn't sufficient, and that should tell you something.
