I had an idiot moment...question was supposed to be...are you using the car as a dd or drag only? 4.75+ fd will land you at like 4+k rpms at 65 on the highway lol

ITR gears are legit for N/A...are you trying to have it as a daily driver? Drag or road racing? Mfactory 4.8 final drive will do you good. The biggest gear drop past 3rd should be like 22%. ...

not long ago i had a similar problem, though i couldnt accel past 15mph. was caused by a combo of 3 sensors - TPS, MAP, and 02 sensor...if i had to guess i would say yourissue IS caused by your 02...

teammfactory.com is a good place to look...the synchro sets are pretty cheap(from synchrotech) and are pretty easy to switch out. 2nd to 3rd grind is pretty common but its not a big deal.
