Default Wierd Overheating problem

One night was was driving home from work and was able to watch my temp guage go from half way to above the H. I checked to radiator the next day and found that the coolant was low and noticed that the overflow tank was filling up daily and i was loosing water dayly. after replacing to radiator cap the car was still overheating. I replaced the thermostat and found that there was not thermostat in the engine prior to me installing one. after installing the new thermostat the engine overheated faster. i replaced it again and had the same issue. then i moved to replacing the water pump. after replacing that the car seemed to run a little cooler but was still overheating. i pulled the radiator and ran the motor with a bucket of water. i found that the thermostat did not open until the gauge said that it was overheating, the water did not even boil. the car is now retaining water but still shows that it is overheating. when i am driving the temp displays normal for a couple of miles then jumps all the way up wile in traffic. on the freeway it goes down to normal and jumps back up again. the car does not act like it is overheating, in fact it runs better. what could i do to fix this issue.

bad temp sensor or massive air in the system. water pump might be sporadically failing. I had the same problem and it ended up being air in the system and a faulty water pump.
