Well I don't know the settings on the "powerprobe" and or if you had the wire off the sender. Since the sensor "varies" the resistance to ground to make the gauge move it is hard to call.

If you are going to go with an aftermarket gauge, you can get a "unit" that will replace the factory sender. Pretty sure, I'm too old to remember things, the factory sensor is standard 1/8 BSP threaded so there are plenty of aftermarket gauge sets that can use the factory hole in the head - I would not use one that "splices" into the rad hose.

i had the connector off the sensor when i tested for ground are u saying i need to use a multi meter and measure the ohms?(i think that's resistance)

Yes, it is resistance to ground that makes the gauge move....I don't have good spec's on the 4th gen's and none on the prelude H23a so I can't give exact details but you get the idea of where I was going.

well i found the problem my new temp sensor was bad it was probly a reman one the part where u connect the connector to had alot of play in i could move it up and down so i swaped another one from my f22b1 head i had laying around and the gauge is steady and it has not overheated but now another problem has come to light my fans dont turn on when they should i jumped the thermostat housing temp sensor and both fans turn on but the 30-40mins i had it running the fans never turned on and yes i was taking temp measurements to make sure it was up to temp. So does that mean the 2 fan temp sensors are bad? let me know how i can tell if there bad or not

If you jump the connector with the key on and both fans came on, don't mess with the relay.

To test the switch, well you are going to have to test it. In a pan of water when it gets to 194-206 F (or there abouts) the switch will close - continuity across the two pins.

You might be chasing a non issue, these things (a proper cooling system) can sit and idle for a LONG time before the temp gets to the 194-206 range
