So, after my speakers are amplified, the max rms is 60x4 or 240 watts total 4 ohms. Should I try to shoot for 60w or is it ok if I overdrive a little?
Also, should I go for an amp for a sub that is around the 240 to keep it even with the bass or should I go higher on wattage for the sub, like 300-350?
Running polk audio DXI 650s all around, probably will get a DXI 124 DVC sub.

There is a saying, "it's better to be over-powered then underpowered".
Underpowered systems blow far more speakers then over-powered systems do, it is not the under-powering that blows the speaker, it is over-driving the system into constant clipping. [distortion] that blows the speaker, not to say that overpowering a speaker will not blow it, it definatly will, you just have to keep in mind if you have 60W continuous, RMS] speakers driven by a 100W RMS amp the amp will seldom put out 100W, only on the loudest passage and only for a short duration, the 60W speaker will also have a "peak" power handling of about twice as much as the continuous rating.
You are severely under-powered, your Polk's are 100W continuous, [according to their specs], so you should have no less then a 4x100W RMS amp, a 4x125-150RMS would be better.
Hint, disable the tweeters on the rear speakers and wire them in series to the bridged rear channels of the 4ch amp you use, it will help with imaging and staging and pretty much eliminate left/right bias, [improve overall SQ]. 94
